When You Care Enough To Peel The Berry Best....

My daughter Heather (Catfish Kisses) and her Ben are visiting this weekend from NC!  Ben loves strawberries, but can't have the seeds...so I decided to peel them and make Strawberry Ricotta Cheese Pancakes Saturday morning.  Not easy, but Hey...I like a challenge!

To peel the berries you definitely need a really sharp, short knife, and lots of patience.  Start at the top after hulling, and carve under the seeds down toward the point---very slippery though :}

I just used Krusteaz pancake mix (also love Williams Sonoma's pancake mix), added probably one cup of ricotta cheese in little bits, like 1/2 tsp's (after mix is already blended), then fold in cut up chunks of strawberry.  I also have used blueberries...way yummy, too!  The best results I've ever had with pancakes, by the way, is using All-Clad's double burner griddle...love it!

  2. You have more patience than I do. I bet they were awesome. I wonder what would have happened if you cracked a couple of egg whites in the batter?
