When You Care Enough To Peel The Berry Best....

My daughter Heather (Catfish Kisses) and her Ben are visiting this weekend from NC!  Ben loves strawberries, but can't have the seeds...so I decided to peel them and make Strawberry Ricotta Cheese Pancakes Saturday morning.  Not easy, but Hey...I like a challenge!

To peel the berries you definitely need a really sharp, short knife, and lots of patience.  Start at the top after hulling, and carve under the seeds down toward the point---very slippery though :}

I just used Krusteaz pancake mix (also love Williams Sonoma's pancake mix), added probably one cup of ricotta cheese in little bits, like 1/2 tsp's (after mix is already blended), then fold in cut up chunks of strawberry.  I also have used blueberries...way yummy, too!  The best results I've ever had with pancakes, by the way, is using All-Clad's double burner griddle...love it!

Mr. Clean Magic Erasers!!!

I DID survive the Outlaw Raptor Run, and can't wait to tell you about it!  Want to put up pics and video that I took...just been super busy this week. My daughter Heather (Catfish Kisses) and her sweet Ben are coming to California to visit in 2 days...YAAY!!!

SO if you've never tried Mr. Clean Magic Erasers, you must!  They're amazing, and the best product ever invented.  I've actually come up with several other ideas the could/should create with it...just sayin' :}   Anything that you clean with them is effortless!  When I've done Home Staging, it's awesome to use on wall or floor scuffs, at home on counter grout, and I've even done the porcelain kitchen sink with no cleanser at all...spotless!

Gotta get back to work and will be posting low-sodium recipes soon and Raptor Run photos and commentary (can I just say I was the only girl to go on it?)  More to follow...

Just Trying To Be Healthy!

Well, we leave in a couple of days for the off-road trip...Yaay!  I went grocery shopping to get  things that are relatively easy to eat and grab out of the ice chest while driving fast (very), way bumpy, and down big rocks.  Not an easy feat, but came up with some ideas...meats and cheese w/pickles or cucumbers, crackers, protein shakes, chicken salad, egg salad, OH....and I guess the one that I thought was great and healthy was bad judgement (but Bob found hilarious) on my part.  I found a bag of cute individual packs of prunes.  Other than cute, I thought it'd be healthy, yummy, and way easy to eat.  I was all proud of myself showing him the items I had come up with, and when I showed him the prunes all he said (loudly) was "what!? prunes out in the desert for 6+ hours!?" and then couldn't stop laughing.  Guess I hadn't really thought about it....hope the grapes will be ok.

Off to make cookies and stuff :}    OH...next week I'll share some fun and yummy recipes that I've come up with that are totally low sodium, since I can't have it anymore.

So While Bob is busy making sure everything in the back of the truck is tightly strapped down, I'm concentrating on important things like Blinging-up the helmet (mine)!

Monster Energy Outlaw Raptor Run....

So...In about a week, we will be one of 10-15 Ford Raptors participating in a 240 mile course through California's most challenging desert terrain, to Vegas!  The terrain consists of hard packed trails, billy goat trails, some speeds in excess of 80mph, and rock crawling down the side of a mountain....OK!  Next day, same thing coming back but a different route.  I'm totally excited, but...

Just a few concerns are (a) Helmet..feeling all closed up in that thing, plus the thought of even needing it.  Then when you take it off...helmet hair!  (b) Peeing!  Monster drinks is filming this thing.  Out in the middle of nowhere, trucks of people (mostly men) with you, dirt, squatting and not getting your pants/shoes wet. (c) Oh, uh uh...did he just mention snakes last night!?

On the way home from Lowe's last night, I told Bob that my biggest concern isn't the helmet (I can "bling" that up a bit), it's the whole having to go to the bathroom thing.  Of course he mentions #2 which had never even crossed my mind.  I said "no, #1"!  So he offers to pull over and let me "practice" right where we were, and said "there's even a couple of bushes".  Don't even think for a minute that I did it!  So, I've really gotten nowhere with that situation, but he did mention to me that if I had taken that opportunity to practice on our way home, there just wouldn't have been any rattlesnakes like there is out in the desert.

It's going to be a busy week, but we're excited about it and it'll be fun meeting the others going along and checking out their trucks.  I'm planning on taking lots of pictures.

Honey...How fast are you going??

About a week after getting the new "toy", we went out of town for the weekend.  Late one evening on our way to the hotel, Bob asked me if I'd like to drive.  Heck yeah! After positioning the seat, gas and break pedals, and mirrors, we were off.  Wo-oww...that thing is pretty HOT to drive!  I stopped at a red light, and next to me on my drivers' side were two young guys (who could've been my sons) who were trying to flirt, not seeing my husband in the passengers seat.  When the light turned green, they weren't letting up, so Bob said "Hit it!", so I did!  Woo-Hoo!!  OMG! I couldn't believe how fast that thing took off...I was HOOKED, and decided that I was gonna be the driver going back home the next day!  On the freeway, maybe I made him a little nervous (maybe I've watched too much NASCAR), but he asked several times, "Honey, how fast are you going?".  I had no idea...it FELT like the right speed :}

How did this RAPTOR thing start??

We decided to take a day trip to Solvang and there was a HUGE car show event taking place.  Ten minutes into it, my then boyfriend, spotted THE truck that he was in love with! A black 2010 RAPTOR. I'm not all into cars or anything, but it was an awesome looking truck.  Well...it all happened pretty quick after that.

In less than two week we were sitting at a Ford dealership, and I was watching the salesmen play their games.  I sat silently as long as I could...I texted my honey that we needed to leave, and that I would call my auto broker friend to see if he could help.  Within a week he had one for us to go "look at".  Shocker! We drove it home.
